Last night I made Peirogis for dinner. Peirogis are little Polish dumplings that can be stuffed with all kinds of fillings. I made some with seasoned mashed potatoes and onions, others with sauerkraut and mushrooms, and some i filled with a little of both. They turned out delicious, but they are not worth all of the work. The fillings were easy enough to make but the dough was such a pain to roll out and cut into little circles.
The recipe is from the cookbook Vegan Brunch by Isa Chandra Moskowitz. I was so excited to finally find a vegan recipe that includes sauerkraut! I eat sauerkraut straight out of the jar almost everyday with my lunch. I'm a little bit of a fermented foods fanatic! This recipe was a great way to incorporate one of my favorite foods into a dish! I will probably be crazy enough to make these again because they are soooo good.... Just not any time soon.
