Whats Growing On!

I haven't posted anything about the garden in a while, so I figured I would write a little about what has been going on outside! Parker and I have everything ready for our spring/summer garden; we are just waiting for things to grow. The heat (and fish emulsion fertilizer) has really been helping our seedlings. After they got their first real leaves they quit growing for a while, but now the baby tomatoes, eggplants, thyme, sage, dill, bell peppers, and cosmos are showing a little vigor!

Parker's potato plants are definitely showing the most vigor of all of our plants. Parker bought a few blue seed potatoes at the Natural Gardener nursery a little over a month ago. He cut them into pieces with at least one eye per piece and planted them in a special planter box he built.

The planter box is made in two stackable levels. As the potato plants grow, we will rebury a portion of them to encourage deeper root growth... this makes more potatoes! Parker and I read about this technique in The Urban Homestead by Kelly Coyne and Erik Knutzen. The authors suggest growing potatoes in a stack of tires. We didn't have any tires laying around, and we are pretty sure the Texas sun would heat those tires up so much nothing would have a chance to grow in them. Instead, Parker made imitation tires. They look a lot nicer too!
