It takes a long time to get the hang of pie making. I guess some people luck out with a good recipe right off the bat. For me, finding a good pie recipe felt like looking for a needle in a haystack. I have slowly learned how to make fruit pies, but I didn't think a vegan custard pie that firms up was possible. Isa Chandra Moskowitz's and Terry Hope Romero's recipe for "Lost Coconut Custard Pie" from the Veganomicon proved me wrong.
It was amazing! The trick is vegan gelatin. Well, the recipe called for agar powder, a thickening agent I couldn't find at my grocery store, so I used the gelatin instead. I found vegan gelatin at a health food store, added 1 teaspoon for safe measure, and it turned out perfect. I made the gram cracker crust also. I really don't understand why people buy these pre-made. It held together better than the store bought variety and hardly took any effort to make.
