This weekend I discovered the wonders of quinoa tabouleh! It is just like traditional tabouleh except it is made with quinoa instead of bulgur wheat. The recipe I used was found in Jae Steele's cookbook, Get It Ripe, but I imagine you could follow any ol' tabouleh recipe and substitute the quinoa. Jae Steele's recipe also included a chopped up cucumber and a can of rinsed chickpeas to make it more substantial. Parker and I ate this incredible salad for dinner a few nights ago served over a bed of kale! I don't think we could have had a better meal after working in the yard all day! It was so fresh and filing! I made it again last night served over collards. Just as delicious! I'm so excited about this stuff! Even though it is so simple, I think it is one of the best things I have made. I want to eat it every night!
You really can't get any better than greens, beans, and whole grains!
