Yesterday, I got paid to bake! Can you believe it!?! As I mentioned in an earlier post, my co-worker from the Bed and Breakfast asked me to make a dozen cupcakes for a party she was throwing! I made vegan almond mocha cupcakes and delivered them yesterday.
I felt a little rushed with the whole affair since I had to go to work at the Bed and Breakfast that morning, but everything went smoothly (even though I realized I was out of cupcake liners and had to make an emergency run to the grocery store right at the beginning of the baking process).
The recipe is a variation of the chocolate cupcake from Vegan Cupcakes Take Over the World by Isa Chandra Moskowitz and Terry Hope Romero. One of the cookbook's modifications of the chocolate cupcakes suggests instant coffee in the batter and ice cold drip coffee in the frosting. I did this and I added a ton of almond extract to the batter and frosting. The cookbooks frosting is a little to airy for me so I change that up a little bit too.
To top off these little guys I grate some semi-sweet bakers chocolate over the top just for looks!
